Vegetarian Volcanic Fried Rice | Butterfingers Kitchen

This month I try to stay vegetarian, so I've been trying out quite a few new vegetarian recipes. Today I'm sharing with you this delicious vegetarian volcanic fried rice recipe. It's Korean-inspired.

​It's not only appetizing but it's also visually satisfying. It will definitely impress your vegetarian or even non-vegetarian guests.

​You can choose other kinds of vegetables or even add ground pork or beef to the recipe. I hope you'll enjoy it as much as my husband and I did. :)

Ingredients:
  ❥ Fried Rice Sauce:
  • 2 tbsp gochujang (Korean hot pepper paste)
  • 1 tbsp soy sauce
  • 2 tbsp mirin. Can be substituted by 2 tbsp water + 3/4 tsp sugar
  • 1 tbsp sugar
  • 1-2 garlic cloves, minced
  • A pinch of pepper
​  ❥ Egg Lava:
  • 1/2 cup water
  • 4 eggs
  • 1/2 tsp salt
  ❥ Fried Rice: 
  • 1 king oyster mushroom
  • 3 large shiitake mushrooms
  • 1 cup green peas (fresh or frozen then thaw it out)
  • 3 Korean green pepper or sweet pepper
  • 1/2 medium sized onion
  • 2 cups leftover cold short-grain rice. Short-grain rice would make it easier for shaping
  • Roasted seaweed
  • Shredded mozzarella cheese

Instructions:
  • Dice all the vegetables and set aside
  • Mix all ingredients for the fried rice sauce into a paste
  • Mix all the egg lava ingredients and beat the eggs slightly
  • Heat up 1/2 tbsp vegetable oil in a skillet on medium heat
  • When oil is hot, add onion and stir-fry till translucent then add Korean pepper and stir fry for 30 seconds
  • Add peas and stir-fry till softened
  • Add mushroom and cook till they shrink, then make a hole in the middle of the skillet and add rice
  • Break rice up using 2 spatulas then add the sauce
  • Mix everything together till rice is evenly coated with the red sauce
  • Spread rice out evenly on the skillet and let cook on low heat without stirring for 1-2 minutes to get crispy bits in your fried rice
  • After that, add shredded roasted seaweed and shredded mozzarella cheese onto the fried rice and start forming a mountain/volcano
  • When you get the shape you want, make a hole and passage for the "lava" using the end of your spatula
  • Turn the heat to medium and start pouring "lava" onto the volcano
  • To cook the egg evenly, keep stirring around the egg.
  • Serve hot on the skillet when egg is cooked! 
Enjoy! Oh, if you don't need egg, just melt mozzarella cheese in some water and use it for the same purpose ;)
