No-Bake Black Forest Cheesecake - Butterfingers Kitchen

​NO-BAKE Black Forest Cheesecake. Why? Because cherry season is here. Spring and summer are my most favorite seasons of the year to enjoy fresh fruits. I eat 'em fresh, and I turn 'em into scrumptious desserts too. This recipe is super easy, but also yields incredibly delightful result. 'Stressed' spelled backwards is 'Dessert', isn't it?

Ingredients:
  • 6 inch springform pan
  • 4 oz (113g) graham crackers/oreo, crushed
  • 4 tbsp (57g) butter, melted
  • 1/4 cup (57g) semi-sweet chocolate chips
  • 8 oz (227g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 tsp vanilla bean paste
  • 1 tbsp milk
  • 1/4 cup heavy cream
  • 8 - 10 oz frozen dark sweet cherry
  • 1 tbsp sugar
  • Starch water: 1/2 tbsp cornstarch + 1 tbsp water 

Instructions:
  1. Crush crackers and add melted butter, then mix well
  2. Press cracker crumbs onto the bottom of springform pan, and even the wall if you like then let chill in the fridge till needed
  3. Melt chocolate completely using a microwave or double boiler, then let cool.
  4. Add cream cheese into a mixing bowl, then add sugar
  5. Smoothen cream cheese and sugar using a spatula
  6. Add vanilla and milk to cream cheese then blend on medium speed till well combined
  7. Add in melted chocolate and continue to blend till well combined
  8. Add in heavy cream and blend till thick and incorporated
  9. Pour cheesecake filling into springform pan then spread it out evenly. 
  10. Refrigerate for at least 2 hours
  11. Make cherry jam: add frozen cherries into a small sauce pan, then add 1 tbsp sugar, mix well then set aside for 15 - 30 minutes. Cook on medium low heat and keep stirring to dissolve sugar. Mash cherries when sugar has dissolved completely. Add in starch water and keep stirring till it reaches the desired consistency
  12. Allow cherry jam to cool down then chill in the fridge till needed
  13. When cheesecake has set. Remove from springform pan and decorate with whipped cream, cherry jam and fresh cherry.
