Healthy Oat-Banana Muffins Easy Recipe | Butterfingers Kitchen

It's been a while since I last posted a recipe for my Healthy Eating Series. This Healthy Oat & Banana Muffin is the perfect recipe for a make-ahead breakfast or snacks for all ages. It's perfect for post-workout and or basically all-day snacks.

Facts: "The U.S. Food and Drug Administration claims that oats, as part of an overall heart healthy diet, could lower the risk of heart disease.
The possible health benefits of oats include: reducing the risk of coronary artery disease, lowering levels of cholesterol, and reducing one's risk of colorectal cancer."

Ingredients:
  • 2.5 cups (270g) rolled oats
  • 2 ripe banana
  • 1 cup (245g) Greek yogurt or plain yogurt
  • 3 tbsp maple syrup or honey
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1.5 tsp baking powder
  • 2 handfuls of nuts/chocolate/dried fruits
  • More nuts/chocolate/dried fruits for decor

Instructions:
  1. Preheat oven to 400 degrees F (200 degrees C)
  2. Put all ingredients except for nuts/chocolate/dried fruits into a blender
  3. Mix well and blend till well combined and smooth (cake batter texture)
  4. Add in 2 handfuls of nuts/chocolate/dried fruits and mix well
  5. Pour into ramekins or moulds, 3/4 full
  6. Bake in preheated oven for 18-20 minutes.
