Shortcut Puff Pastry & Puff Pastry 2 Ways - Butterfingers Kitchen

​I learned this effortless recipe from Ms. Gemma Stafford (www.biggerbolderbaking.com). She's amazing. She's inspired me so much through the way she makes every recipe bigger and bolder in her own way.

The result from this recipe is incredible. The pastry has lovely layers and a crispy texture. Absolutely scrumptious. Every pastry lover should give this recipe a try! Oh, I also added 2 easy ways of shaping puff pastry at the end, so watch till the end nah ~

Ingredients:
  For the pastry:
  • 14 tbsp (210g) frozen butter
  • 2 - 1/3 cup (350g) all purpose flour
  • Pinch of salt
  • 1 tbsp lime/lemon juice
  • 8 - 10 tbsp (120 - 150ml) cold water
  For cream cheese filling:
  • 8 oz (227g) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/4 tsp vanilla bean paste

Instructions:
  1. Squeeze lime/lemon. Add lime/lemon juice to cold water then refrigerate till needed
  2. Add flour to a mixing bowl, add a pinch of salt then mix well
  3. Grate frozen butter into flour
  4. Mix well till it resembles bread crumbs
  5. Gradually add in cold water and mix with a fork till combined
  6. Knead with your hands to form a ball
  7. Flatten dough and wrap in cling film and refrigerate for at least one hour
  8. To make cream cheese filling: mix cream cheese with sugar and vanilla till smooth and incorporated then chill in fridge till needed
  9. When dough is ready, flatten it out and shape according to video
  10. Add cream cheese filling and fruits/chocolate then bake in preheated oven at 400 degrees F (205 degrees C) for 15 - 20 minutes, or until pastry is golden brown.
  11. Sprinkle own some powdered sugar and enjoy!
