Portugese Egg Tart / KFC Egg Tart - Butterfingers Kitchen

Many people have asked me if it's possible to make Portuguese/KFC egg tarts using my easy puff pastry recipe, the answer is a definite YES. This egg tart is like a gift from heaven. Nothing can beat that combination of crispy crust and creamy custard filling. Besides, I've also added 2 puff pastry bonuses at the end. Go check it out guys!

Ingredients:
   
❥ For egg tarts:
  • ​1 shortcut puff pastry recipe
  • 1/2 (125ml) cup milk
  • 2 tbsp (30ml) heavy cream
  • 1 egg yolk
  • 2 tbsp (25g) granulated sugar
  • 1/2 tbsp corn starch
  • 1/2 tsp vanilla bean paste
   ❥ For apple turnover:
  • One apple, diced. I used Granny Smith's
  • 1/4 cup (50g) brown sugar
  • 1/4 tsp cinnamon powder
  • 1/2 tbsp corn starch

Instructions:
   ❥ For egg tarts:
  1. Add all ingredients except vanilla into a small saucepan, whisk everything together then turn on low heat
  2. Keep stirring to prevent mixture from boiling
  3. When mixture gets a little bit thicker (check by wiping the spoon/spatula, if the mixture doesn't come together, it's time to turn off the heat)
  4. Strain mixture through a sieve to remove any lumps. Use a spoon to remove bubbles from custard mixture
  5. Preheat oven to 480 degrees F (250 degrees C)
  6. Flatten dough into moulds, make some holes on the bottom using a fork, then pour custard mixture into each mould
  7. Bake in preheated oven for 20 - 25 minutes.  
   ❥ For apple turnover:
  1. Combine all apple filling ingredients
  2. Preheat oven to 400 degrees F (200 degrees C)
  3. Cut pastry into squares, and fill each one with 1.5 - 2 tbsp apple filling
  4. Seal it and make some holes using a fork
  5. Bake for 25 minutes or until golden brown
  6. ​Sprinkle on some powdered sugar
