Charsiu Pork & Noodles Easy Recipe | Butterfingers Kitchen

​Hi there! It's been a while since I last posted a recipe. I've been a little busy and eating out a lot, but I am back on track now, hopefully. 

This is another dish from my childhood. Vietnamese people call it "xá xíu", and we usually eat it with rice, noodles or in a baguette as a sandwich. It's so delicious, yet so easy to make. This is also one of the first dishes that I learned to make. 

Today I am sharing with you the simplest recipe for the best Charsiu (charsiew) BBQ Pork with noodles.

Ingredients
 ❥ Pork Marinate:
  • 1 - 1.5 lbs pork shoulder/butt/belly
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1.5 tbsp oyster sauce
  • 1/2 tsp five-spice powder
  • 1/2 tsp garlic powder or 1 tbsp minced garlic
  • 1/2 tbsp sesame oil
  • 1/2 tsp black pepper
  • 3 - 4 drops of red food coloring (optional)
 ❥ Noodles Sauce:
  • 2 tbsp sugar
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 6 tbsp chicken stock or water
  • 1 shallot, minced
  • 2 garlic cloves, minced
 ❥ Noodles Toppings:
  • ​Shredded carrot and bean sprout, blanched
  • Shanghai bok-choy, blanched
  • Chili oil.

Instructions:
  1. Combine all pork marinate ingredients (except for pork) in a small sauce pan. 
  2. Cook sauce on medium heat till sugar dissolve, stir constantly
  3. Let sauce cool completely before marinating pork
  4. Massage sauce onto pork and chill in the fridge for at least 2 hours, better overnight.
  5. Brush sauce on both sides of pork and bake in preheated oven at 430 degrees F for 40 - 60 minutes depending on how thick your pork is. Flip meat halfway through cooking and brush on more sauce.
  6. If you have excess pork marinate, cook it up and use it for noodles, but if you don't then combine all noodle sauce ingredients (except for shallot and garlic) together in a small bowl. 
  7. Add minced shallot and garlic into a small sauce pan with hot oil, stir fry till fragrant.
  8. Add in sauce and cook till thickens, stir occasionally.
  9. Use your favorite type of noodles and cook noodles according to package instructions. 
  10. Add some noodles into a bowl (one serving), and add your choice of vegetables. I used blanched shredded carrot and bean sprouts.
  11. Add as much sauce as you'd like then toss noodles to coat evenly.
  12. Add blanched Shanghai bok-choy on top then add slices of meat.
  13. Add some chili oil for spice, if you like.
